Zucchini boats
Sep. 30th, 2003 02:46 pmThis was my lunch today, with a couple chopped mushrooms added. Makes a side dish for two. My daughter, Marian, likes these, too. Endless variations and substitutions are possible. I like to serve it with hash browns.
1 medium zucchini
1 teaspoon oil
½ teaspoon garlic, minced
1 green onion, chopped
dash pepper
2 eggs, beaten
¼ cup cheddar cheese, grated
Cut zucchini in half lengthwise. Scoop out pulp and chop it. Microwave the shells on high for two minutes, or steam in a pot with a little water until tender.
Heat oil in a pan. Sauté garlic, onion and pulp until tender. Add eggs and pepper and scramble.
Scoop egg mixture into shells, sprinkle with cheese and place under broiler for three or four minutes.
