They say its taste improves after sitting around for two weeks. I wouldn't know, even though I make shortbread every year. These will be lucky to last three days. I might have to make another batch.

My sister winds up making about 12 - 20 dozen shortbread each year. She keeps some and gives some away. The 'good' ones are set aside for about 3 weeks in the backroom to age and become very flavourful. You risk your life if you are found sneaking into those containers! She always has a couple containers that you are allowed to get cookies from, so you don't have to sneak ones from the 'good' batch.
Another thing that is really nice with shortbread is a little port or sherry. yum!
Cheesecake is another food that tastes better a little bit aged. I find it peaks at about 5 days, and is good for a week, then it kinda goes strange after that. And yes, I have had cheesecake last a week!
Better than that, I'll try to save some or bake some more to bring when I see you. And you know how I like dessert wines. I'll have to order a bottle of sherry from GroceryGateway for my own little treat this week.
oh yes please! oh - I see Bill is planning on making some. Well, I would like a nibble of yours as well. It's always interesting tasting different recepies of shortbeard. Each person makes it a little bit different.
Yes, I think I told you, but I use a mixture of corn starch and flour, so they will probably be a little different from what you're used to. I use a Harrowsmith recipe, but that's also the way my mother made them.

For your pleasure, here is my shortbread recipe, taken from the Harrowsmith Cookbook Volume 1. This is the way my mother made them.
SHORTBREAD
½ lb. butter ½ cup cornstarch ½ cup icing sugar 1 cup flour
Beat butter until light and add remaining ingredients one at a time, beating well after each addtion. Roll into small balls and flatten with a fork (you will need to flour the fork between each cookie).
