As Danny [livejournal.com profile] djjo or my daughters could tell you, banana muffins are nearly a staple around here. I bake them two or three times a month. This morning I woke in a grumpy mood, which called for some familiar comfort. I decided to try a banana bread recipe barely different from the one I usually use.





This morning [livejournal.com profile] currawong and [livejournal.com profile] androkles complained about the unbearable sweetness and fattiness of American food, specifically Krispy Kreme Donuts. This might qualify as the homespun version, designed to clog your arteries and raise your blood sugar. What else can I say? The only thing better than this is pumpkin bread (recipe in the comments section). I'll post my usual recipe because I've decided muffins are slightly more practical.

Banana Muffins

½ cup butter
1 cup sugar
¼ cup sour milk (add 1 tsp lemon juice and set aside for five minutes)
2 eggs, beaten
2 very ripe bananas, mashed
2 cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
optional: half cup of chocolate chips or chopped nuts

Preheat oven to 375°F. Cream together butter and sugar. Stir in milk, eggs and bananas. Add dry ingredients and mix just until thoroughly moistened. Spoon into lightly greased muffin tins and bake 15 to 20 minutes. Makes one dozen large muffins.

Or bread

The bread recipe omitted the milk and salt, used only 1¾ cups of flour, halved the baking soda and powder, and included 1 tsp vanilla. Bake at 350°F for 50 minutes.

Breadmakers are wonderful. I lost the little blade to mine (it must have gone into the garbage accidentally) and haven't been able to replace it.

It sounds like you're out of control a good bit of the time, even in your sleep. Breakfast in bed must be yummy at your place.

Oh, yes. We bought a bread machine about two weeks ago -- we'd been thinking about it for a while, partly out of frustration with the difficulty of finding interesting bread in stores (not to mention the prices!) -- and we've ended up making a loaf practically every day.

So now of course we have to buy another one for the other house.

Will you stop making me lick the computer screen? Tech services is starting to wonder why my monitors keep shorting out.

As for Krispy Kreme donuts: my impression is that either you love them or you miss the point entirely. Trust me, we don't all eat that way (well not most of the time anyway) Why is it that only the awful stuff gets exported? (I lost all respect for Harrods when we saw that idiotic "Big Mouth Billy Bass" singing fish proudly displayed amid the high end goods.)

But we are addicted to fat and sugar in North America, and unfortunately our diet is foremost among our exports. ;-)

Gods, Sylvano, that bread looks scrumptious.

I made a copy of the receipt to try out. I've been using an eggless version with yogurt and a couple of other oddities... sour cream in one case. It always tastes fine, and the stuff disappears quicker than a conjuring trick.

I have thought of substituting sour cream for the sour milk, but I'm hesitant to tamper with baking recipes.

I might just cut back a little on the sugar having exceeded my quota for the next few weeks by the power of 10.

One bite of that Krispy Kreme and...(shudder)...I don't want to think about it!

Just wanted to let you know I tried the banana bread recipe for our New Recipe Night potluck with the Empire Bears. I substituted Splenda for sugar as I've been advised to avoid sugar by my doctor, and left out the vanilla since I didn't have any in the house. Nevertheless one and 3/4 of the two loaves I brought were devoured. Thanks for the recipe, it was a hit!

By the way I happened to mention to one of the club members (who is also a diva first tenor in the RGMC, so you might possibly meet him in Montreal) that I got the recipe from someone I thought was cute, so I had to bring your picture along to prove it. So now there are a few bear Chorines who will be looking forward to meeting you this summer. ;-)

I'm not sure if it means anything that I typed "fist tenor" instead of "first tenor" and had to correct it...
