Peanut turkey stirfry

1 cup milk
1 Tbsp lemon juice
1 lb turkey breast, skinned
1 Tbsp oil
2 tsp garlic, minced
½ tsp cumin
½ tsp thyme
1 cup snow peas
3 celery stalks
3 carrots
1 red pepper
1/2 tsp ground ginger
3 Tbsp peanut butter
1 tsp dry mustard
3 Tbsp soy sauce
1 tsp cayenne
½ tsp garlic, minced
1 tsp turmeric
½ lb rice noodles
Combine milk and lemon juice and set aside.
Cut turkey into bite-size pieces. Stirfry with with garlic, thyme and cumin for five minutes until cooked. Set aside and keep warm.
Julienne and stirfry snow peas, celery, carrots and red pepper in same skillet. Return turkey to skillet and keep warm.
Combine milk mixture with peanut butter and remaining seasonings in saucepan. Bring to a boil over medium-high heat, stirring often. Reduce heat and simmer for 4 minutes.
Meanwhile cook rice noodles. Serve peanut sauce over turkey, vegetables and noodles.
Serves four.
