One of my favourite dishes, for [livejournal.com profile] isitandlookout.

1 cup milk
1 Tbsp lemon juice
1 lb turkey breast, skinned
1 Tbsp oil
2 tsp garlic, minced
½ tsp cumin
½ tsp thyme
1 cup snow peas
3 celery stalks
3 carrots
1 red pepper
1/2 tsp ground ginger
3 Tbsp peanut butter
1 tsp dry mustard
3 Tbsp soy sauce
1 tsp cayenne
½ tsp garlic, minced
1 tsp turmeric
½ lb rice noodles

Combine milk and lemon juice and set aside.

Cut turkey into bite-size pieces. Stirfry with with garlic, thyme and cumin for five minutes until cooked. Set aside and keep warm.

Julienne and stirfry snow peas, celery, carrots and red pepper in same skillet. Return turkey to skillet and keep warm.

Combine milk mixture with peanut butter and remaining seasonings in saucepan. Bring to a boil over medium-high heat, stirring often. Reduce heat and simmer for 4 minutes.

Meanwhile cook rice noodles. Serve peanut sauce over turkey, vegetables and noodles.

Serves four.

I wonder if the curdled milk is a sub for coconut milk?

The curdled milk mostly provides consistency for the sauce, which is quite flavourful as is. Coconut milk would work, though.

This looks like a good recipe. Does the turkey pretty much take on the stronger flavors of the spices? I get tired of just the taste of turkey and don't serve it that often. But it's so healthy I'd like to find other things to do with it.

Yes, notice a lot of the spices used here are ingredients of curry. Peanut butter makes a lovely compliment. You'll taste the turkey, but it's not that typical leftover roast turkey flavour, and stir-frying gives it a different texture.
