My daughter took a course in permaculture last February in Nicaragua. She's very interested in agriculture, and wanted to pursue this in the Peace Corps. They placed her in the desert and she was not able to gain any traction with this, so she's leaving early to be an apprentice on an organic farm.

I have a couple young friends who have gone through (or are going through) a similar apprenticeship at a Jesuit centre here. It almost makes me wish I were young again.
